Foodie Friday: Raw Cashew Energy Bites!

These bites are EVERYTHING!!!!! So, I have really been cooking up some recipes every single week. Not only am I doing plant-based meal prepping for multiple customers, but I am experimenting in the kitchen with some delicious recipes. To my surprise, my raw cashew energy bits have become a HIT!!! Why I am surprised? Well the most closed minded people actually love them, which is a shock.

Anywho, these bites are packed with energy and deliciousness. It’s super quick and easy to make and has great benefits.

Some of the benefit of the bites:

The dates help the maintain weight, alternative sweetener, and energy booster.

Chia seeds help boost energy and stamina, aid in weight loss, cleanse the colon, reduce inflammation, and strengthen the immune system.
What You Need:

Raw un-roasted, unsalted cashews

4-5 dates

3/4 cup if shredded coconut (unsweetened if possible, but not a deal breaker)

A little less than 1/4 coconut sugar

Pinch of sea salt (to enhance the flavor)

Chia Seeds

What You Do:

In a food processor, put all the ingredients and blend until it creates a dough.

Once you have a dough scoop some of the mixture in your hand and sprinkle a few chia seeds and roll until you get a ball.

Continue doing this until you’ve used all the dough.

Dress with extra shredded coconut or leave bare. Enjoy now or put in the refrigerator to enjoy later.

It’s the perfect snack that keeps you happy and full! Enjoy alone or with a cup of coffee (minus all the creamer and sugar).

Foodie Friday: Take Action!

Take Action

So much has been heavy on my heart heavy on my mind lately. Everyday I have worked to be a better version of myself and everyday I make strides and progress, and some days I regress then begin to progress and make strides again. Bettering yourself isn’t any easy task as it seems. You wake up and say, “Imma be a better version of myself” and that is as far as it goes; you telling yourself. In life, we have to put more ACTION into our words. More ACTION into our lives. More ACTION into the things we want out of life. Remember, the first step in anything we do is all MENTAL. 
I have been on a transformational journey for almost a year now and I went from making strides to making progress. I am nowhere near where I see myself being, but that is the beauty in the journey. You never know where it is going to take you, but you learn something new about yourself, the world, or other people in each phase. While I have mostly been in the phase of losing weight and being more consistent with adopting healthier habits when it comes to eating and physical activity, I know that over the pass year this is what is leading up to my next phase which dives more into my spiritual side. I can feel it. I can literally feel my spiritual side seeping into my body through my mind, my thoughts, my words. Everyday less of what use to matter doesn’t matter anymore. I am finding that being at peace is more important to me than money and material things. I have seen my growth over the past year and while I am proud of what I have done, I am even more anxious to evolve even more into who I am meant to be. Who is that you ask? Not even I know, but I am excited to meet her as I blown into what nature has intended for me to be. 
Here are some ways that I have been able to evolve over the past year and see growth in the way I think, act, and do, as well as how others views and treat me. 

  • I decided mentally that I needed to change, and that began with recognizing that I wasn’t living up to my full potential, and taking accountability for what I wasn’t doing for myself.
  • The above led me to mentally decided to make my health and overall wellness a priority. This is where the shift began. If you are unaware, what you consume affects every aspect of your life. Changing my eating habits alone gave me mental clarity.
  • Physical activity became another phase after I started eat better. this helped me build stamina, confidence, and the drive to continue pushing on my journey.

I can’t say that I stuck with my journey consistently, that would be false. I’ve had ups and downs, but when I realized my fuck ups and the impact it had I quickly got right back to the plan. 
So, the question I leave you with today is….
